What Shampoo Doesn't Dry Hair?

I am a male with medium length, strait hair. I have always had short (buzzed) hair, but have recently been growing it out to style different ways. The problem is that now that its long, after I shampoo it, and after drying it, it has a kind of frizzy/poofy look. I use conditioner also. After a few days it will flatten down because there is oil in it again. What can I do to keep this frizzy/poofy problem from happening. I'm thinking the shampoo I'm using is drying my hair out.
